Half of the preparations are made with brewed coffee and half with instant coffee. In the book you will find that I prepare three concentrates with fresh brewed coffee. (pages 36 and 37) And how does this happen nicely and not alter the more than 1000 components in the flavor of coffee? Well I personally believe that the molecules in the brewed coffee bond with those in the sugar and trap the taste and aroma yet expulse impurities. Try making these concentrates, either the one for sweets, the one for drinks or the one for savory recipes with good quality coffee and then repeat the experiment with coffee that has impurities and you will see the difference. The one with the good quality coffee will yield a brilliant, dark, shiny, velvety black color. The other one will throw out of the emulsion a gunk similar to those in chicken stock.

There are three more basic concentrates prepared with instant freeze dried coffee, one for sweet recipes, one for drinks and the other for savory recipes. The final two are plain freeze dried coffee and brewed coffee.
