Indulge yourself in these creamy coffee concoctions that are designed to delight all of your senses. The white chocolate mousses and glossy bombes are cool in temperature, as well as flavor and style. The cheesecakes are flavored with aromatic rum, crunchy toasted almonds, smooth coffee caramel, and chunky chocolate chips. Eat the rich ice creams on their own, or use them to prepare the fabulous shakes and bomba cups.
 
Coffee Praline Ice Cream (uncooked)
About 1 1/2 pints
 
  • 2 cups 2% milk
  • 1 1/2 cups heavy cream
  • 2/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 4 tablespoons freeze-dried or granulated instant coffee
  • 1/8 teaspoon salt3/4 cup (about 1/2 recipe) ground Almond Caramel Praline (page 000)
  • Ice cream machine
 
  1. In a large bowl, beat together the milk, cream, sugars, coffee, and salt. Mix in a blender and chill thoroughly.
  2. Transfer to the ice cream machine and process to a thick and creamy consistency.
  3. Mix in the praline and freeze to desired hardness.
  4. Serve immediately, or for better consistency freeze overnight.
  5. Cut the individual brownies and top with whipped cream flowers, if desired. Serve.
