The Asian Vinaigrette with Coffee is my favorite of all the recipes in the book! Always keep this dressing at hand, home and at the office. Then simply drizzle Asían vinaigrette with coffee over some greens and vegetables, and voilà—a midday energy boost!

Use this Asian Vinaigrette with Coffee recipe over raisins and nuts for a healthy coffee ice cream.
cook with Asían Vinaigrette

recipe for 2/3 cup, 4 servings
2 tablespoons parsley, minced
4 teaspoons rice vinegar
4 teaspoons maple syrup
1 teaspoon freeze-dried or granulated instant coffee
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dark sesame oil
6 tablespoons canola oil

In a nonreactive bowl, mix the parsley, vinegar, syrup, coffee, salt, and pepper.
Add the oils and whisk with a fork until the Asían vinaigrette with coffee is thick and emulsified.
