Sweet Cooking Forum at Sabor Barranquilla

I invited an African American, whose family came from the city of Palenque near Cartagena in Colombia and who is an expert in cooking DULCES to share the podium with me. Petrona talked about her family, their ancestry in cooking and the role they carry in our Caribbean society.
She also taught how to make ALEGRÏAS, raw sugar caramel coated millet balls with coconut, coconut cocadas and mamoncillo jam and more. 
Mamoncillo is a relative of the oriental litchi. Here I placed a short video showing what it looks like at the end and how the sugar crystallization point is measured the old traditional way, with water.
