Free Range Hens
were the only kind we had not long ago… when I was a child.
Now they are popular again and we can buy them at local supermarkets instead of having to go to farmer’s markets. They are much larger than the ones we used to have. I had one brought to me earlier this week and it weighed over 6 pounds! I had to have it cut in half to use it in two different recipes, one for Sancocho Valluno and another for Sancocho Trifasico. We are now cooking for four people and therefore recipes have been adjusted to smaller portions, not necessarily those we have at home in Colombia, where these dishes are served for twenty or more guests. In any case it was a pleasure to have such a beautiful plum bird laying in my kitchen, no matter how big it was!
