More Colombian Sweets from San Andrés Islands
All the gamut of coconut desserts were displayed in a beautiful table and later served for all atendees of the Independence Celebration the past 20th of July. There were coconut pie, cocadas or coconut balls and coconut cakes. Here I leave you with a video of coconut cocadas from my hometown wich are a bit different as they are made with larger cuts of grated coconut. The ones from San Andrés Islands are made with finely grated coconut, raw sugar or panela and formed into 1 inch balls. The pie is made with the same fine grind of coconut, cooked with coconut milk and sugar to a very sweet and thick consistency, then placed in pie dough and served. I leave you here with a video of how to make coconut milk from real coconuts.
Enjoy the real thing.
